Ingredients:
- 375g dried pasta
- 30g butter
- 2 tablespoons plain flour
- 2 tablespoons extra virgin olive oil
- 8 chicken tenderloins
- 2 garlic cloves, crushed
- 3/4 cup chicken stock
- 1 small brown onion, sliced
- 1/4 cup lemon juice
- 1 tablespoon drained baby capers, rinsed
- 300ml thickened cream
- Fresh basil leaves, to serve
- Grated parmesan cheese, to serve
Direction:
- Cook pasta as described on the packet.
- In a large snap-lock container, bring the flour in. Add salt and pepper to season. Put the chicken into a snap-lock jar. Seal the bag. Shake into flour to coat chicken.
- In the meantime, heat 1/2 of the oil and 1/2 of the butter over medium-high heat in a large frying pan. Add chicken to saucepan and shake off extra flour. Cook each side for 4 minutes, or until browned. Move it into a plate.
- Apply leftover oil and butter to the frying pan. Connect garlic and onion. Cook for 3 minutes, stirring, or until onion has softened. Add pan with stock, lemon juice and sugar. Add salt and pepper to season. Stir to blend. Bring it to boil. Switchback chicken to pan. Reduce heat to low. Simmer for 5 minutes, uncovered, or until chicken is cooked through and the sauce has thickened slightly.
- Drain the pasta. Stir pasta into chicken mixture. Garnish with capers, basil, parmesan.
- Serve it hot. Enjoy!
Note:
- use whatever kind of cheese you prefer-mature cheddar and blue cheeses both fit well. If the cheese is milder, add a little more for a richer flavour.
- There’s so much you can do to spruce this wonderful dish here. Start adding meats like grilled chicken, shrimp or sliced ham.
Freezer Instructions:
- The leftovers can be kept in the fridge for 3-5 days in an airtight bag.
- We reheat this pasta usually in the oven, although this can also be achieved in a pot on the burner. If it is too sticky when reheating, you may need to add a little more broth.
