Ingredients:
- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups of sugar
- 2 teaspoons baking powder
- salt (1 teaspoon)
- 1 ½ teaspoons baking soda
- 1 teaspoon espresso powder
- ½ cup vegetable oil or melted coconut oil
- 1 cup buttermilk, almond, or coconut milk
- 2 large eggs
- 1 cup boiling water
- 2 teaspoons vanilla extract

Directions:
- Oven preheats to 350o F. Prepare two 9-inch cake pans by coating them with baking spray or butter and thriving gently.
- Firstly, In a large bowl or a stand mixer bowl, add flour, baking powder, sugar, baking soda, cocoa, salt, and espresso powder. Whisk through to combine or stir in the flour mixture using your paddle attachment until well combined.
- Add the butter, vegetable oil, eggs, and vanilla to the flour mixture and stir until well mixed at medium velocity. Reduce speed, and add boiling water to the cake batter carefully until well combined.
- Equally distribute cake batter between the two cake pans. Bake for 30-35 minutes, until it comes out clean with a toothpick or cake tester inserted in the center of the cake.
- After that, eliminate it from the oven and permit to cool for around 10 minutes, eject from the skillet and let it cool entirely.
- Chill cake with Frosting Chocolate Buttercream.
Note:
- After adding the boiling water, the cake batter will get very thin but, don’t worry this is right, and it results in the most delightful and moist cake I’ve ever tasted!
- DISSOLVE 2 teaspoons of instant coffee or espresso in the boiling water before adding them to the batter for a richer chocolate flavor.
Freezer Instructions:
Let the baked layers of cake cool down completely. Well seal them in bubble wrap and then in foil. Put each sheet into a freezer container, freezing for up to two months. To eat, thaw overnight in a refrigerator with intact packaging. The layers are ready to fill and congeal the next day.
