The odd thing is that the dish doesn’t seem to have originated in China but has become the specialty of the former Pearl’s Chinese Restaurant in New York City at 148 West 48th Street and a production of a chef called Lee Lum.

Ingredients:
For chicken:
- 1-2 pounds chicken breast pieces
- 2 tablespoons soy sauce
- 2 eggs
- 1/3 cup corn starch
- 1/4 chicken broth
- 1/2 cup vegetable oil
For Sauce:
- 1 cup chicken broth
- 4 tablespoons lemons juice
- 1/3 cup soy sauce
- 2 teaspoons minced garlic
- 4 tablespoons honey
- 1/4 cup sugar
- Salt to taste
- 3 tablespoons corn starch
- 4 tablespoons cold chicken broth or water
- thinly sliced green onions and sesame seeds, for garnish
- Rice for serving (cooked white, brown, or fried)
Direction:
Marinate and cook the chicken:
- Cut the chicken into pieces of 1 inch. Whisk the eggs, soy sauce together, and prepare the broth. Add the chicken, and mix well to combine. Cover for 30 minutes and then wait.
- Shift pieces of chicken to a large zip lock bag, and remove marinade. Apply the corn starch to the bag, seal and shake to fully cover the chicken in the corn starch.
- Heat the oil in a large saucepan on the medium-high fire. Move chicken to the saucepan, and organize pieces of chicken so that they don’t pile up on top of each other. Cook for 3-4 minutes, then turn the pieces of chicken over and cook for 3-4 minutes until golden brown from both sides.
- Using a slotted spoon to move the chicken to a lined sheet of paper towels. Discard some extra oil in the saucepan and clean it out with a paper towel.
Prepare sauce:
- To mix, incorporate broth, soy sauce, garlic, lemon juice, butter, honey and salt and whisk. Place over medium-high heat to simmer.
- Whisk the broth (or water) and the corn starch together in a small bowl until dissolved. Bring sauce to simmer, then reduce heat to medium-low, and mix until thickened.
Mix and Serve:
- Switch the chicken to the pan and mix all over for 2-3 minutes until warmed. Serve over boiled rice and garnish with sesame seeds and sliced green onions.
- Serve hot.
Note:
We would recommend you to marinate the chicken for 30 minutes if you have time but, if you are short at the time, you can cut short the time duration to 10 to 15 minutes.
Freezer Instructions:
The leftovers can be kept in the fridge for 2-3 days in an airtight bag.
