Singaporean rice is layered with fried or plain rice, fettuccine or noodles, sweet and savoury Chicken gravy, mayonnaise and ketchup-based Russian sauce and garnish it with fried chilli and garlic.
Let’s see a bit about the origin of Singaporean rice and then we will move toward our recipe.
Origin:
InKarachi, Singaporean rice is the famous dish and originated there. Ironically, the terminology does not reflect the dish’s roots because it was not from Singapore. The name was obviously chosen to make it look Interesting and Oriental.
This Singaporean rice Recipe is so simple to cook and will be a favorite of your entire family! Okay so, Let’s move to the Singaporean rice Recipe without any delay because I’m super excited for it.
Ingredients:
For Chicken Gravy
- 500 grams chicken, cut in cubes
- 3 tablespoon soya sauce
- 1 tablespoon green chilli paste
- ½ tablespoon ginger paste
- 1 tablespoon vinegar
- ½ tablespoon garlic paste
- 3 tablespoon oil
- 1 tablespoon lemon juice
- ½ tablespoon chilli powder
- 2 teaspoon red chilli flakes
For Noodles:
- 100 grams boiled noodles
- 1 cup finely sliced carrot
- 1 cup cabbage
- ⅓ cup chopped capsicum
- ½ cup broccoli florets
- ½ cup chopped onion or green onion
Russian Sauce:
- ½ cup mayonnaise
- 3 tablespoon ketchup
- ½ tablespoon soy sauce
- ¼ tablespoon black pepper
For serving:
- 4 to 6 garlic cloves
- 2 to 3 red chillies
Directions:
Boil the rice:
- Put rice in a pot, and soak it for 20 minutes
- In a saucepan, add cooking oil, water, and salt and let it boil.
- Now add soaked rice in the boiling water and boil it.
Cook the noodles:
- In a saucepan, add noodles, salt and cooking oil and boil it.
- Meanwhile, add oil in pan. Add onion and cook it for few seconds.
- After that, add carrots, capsicum, broccoli and cabbage and mix them well.
- Add soy sauce, black pepper and, vinegar and cook it for few minutes.
- Put the boiled noodles in the gravy and let it cook.
Chicken Gravy:
- Heat oil in another skillet, and fry the seasoning ingredient for a few seconds.
- Add the soy sauce, vinegar and ketchup now, mix well.
- Then add the water. Mix until sauce thickens.
- Add chicken. Perform a taste check and blend properly. Adjust the salt as required, too. Gravy ‘s ready to go.
Assemble:
- In a dish, serve rice. Add noodles on top of it.
- After that, spread the chicken gravy over it.
- Garnish it with Russian sauce, garlic and chillies.
- Serve it hot.
Note:
Switching vegetables:
You can add the vegetables according to your preferences.
Choices of rice:
You can use any other rice version instead of plain rice according to your taste. e.g. egg fried rice, garlic rice, masala rice
spaghetti or fettuccine:
You can use spaghetti or fettuccine as a substitute of noodles. You can also use any other pasta of your choice. But it is preferable to use ribbon pasta for this dish.
Remove excess moisture from rice:
If you find the rice has become soft when preparing, fold the dry cloth or a newsprint and put it under the lid. This retains moisture.
Freezer Instructions:
You can freeze it for 2 days, but don’t keep it in the refrigerator for a long period of time otherwise, its taste will not be the same. Microwave 2 minutes and then eat.
I would personally recommend you to not freeze it as its taste will be affected.
