Let’s see a bit about the origin of this amazing chicken chow mein recipe and then we will move toward our recipe.

Origin:

Chow mein is deemed as a more authentic Chinese dish. Chow mein, (“ch’ao mien” in Mandarin) meaning “stir-fried noodles,” originated in Northern China. While the chow mein was served in take-outs, and many American Chinese restaurants were altered to appeal to Western tastes, it is based on an authentic Chinese stir-fried vegetable dish with boiled noodles.

This chicken chow mein recipe is so simple to cook and will be a favourite of your entire family! Okay so, Let’s move to the chicken chow mein recipe without any delay because I’m super excited for it.

Ingredients:

Chicken

  • 8 ounces boneless chicken cut into thick slices
  • 1 teaspoon minced garlic and ginger
  • ½ teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • ½ teaspoon sesame oil
  • 1 teaspoon soy sauce

Chow Mein

  • 7 ounces dried chow mein noodles
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • ¼ cup unsalted chicken stock
  • 3 tablespoons oyster sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon minced garlic and ginger
  • ½ cup yellow onion thick slices
  • 1 cup green cabbage thick slices
  • ¼ cup carrots slices
  • 1 cup red cabbage thick slices
  • 1 cup bean sprouts
  • ¼ cup green onion long pieces

Directions:

Chicken

  • Combine sliced chicken, ginger, garlic, soy sauce, cornstarch, and sesame oil in a medium-sized bowl.
  • Heat a wok over medium-high heat, or large pan.
  • Add the oil, add the chicken after the oil gets hot.
  • Stir-fry the chicken for about 3 minutes, until lightly browned and cooked through.
  • Transfer the chicken to a plate and set aside.

Chow Mein

  • Cook the chow mein noodles according to direction of the manufacturer on the packet.
  • Drain the noodles, and reserve them.
  • Mix together the chicken stock, soy sauce, and cornstarch in a bowl. Put it aside.
  • Heat up the wok (bowl-shaped frying pan) over heat.
  • Stir in the oil, then add the garlic and ginger once hot. Saute until fragrant but not browned, for 15 seconds.
  • Add the green cabbage, onion and carrots, stir-fry for about 2 minutes, until tender.
  • Add the noodles and sauce to cook. Stir to combine and cook for about 1 minute, until the sauce has thickened.
  • Add the purple cabbage, green onions, and bean sprouts, stir-fry for just 1 minute until tender.
  • Add the chicken back to the wok, stir until warm and combine.
  • Immediately serve chicken chow mein.

Note:

I prefer to do this with thigh because it’s juicier, but it can be made with tenderloin or breast. If you use the breast, use the Chinese method to tender so that it is super tender and juicy as you get at the Chinese restaurant.

Freezer Instructions:

The leftovers of chow mein can be kept in the fridge for 1 to 2 days in an airtight container.

To reheat, place the chow mein in a bowl and add few drops of water and cover it. Microwave till it get warm.
