So, when life gives you a lemon, don’t make lemonade rather make the delicious tart by following the lemon tart recipe below.  Let’s see a bit about the origin of this amazing lemon tart recipe and then we will move toward our recipe.

Origin:

Two schools of thought exist in tarts history. One posits that tarts developed out of the gastronomy practice of “placing items on top of other items”. The second school of thinking holds that tarts emanate from the practice of mediaeval pastry-making, and are in fact a type of flat, open-faced dessert.

An early tart was the Italian crostata which dates back at least to the mid-15th century. It was described as a “free-form rustic variant of an open fruit tart”

This lemon tart recipe is so simple to cook and will be a favourite of your entire family! Okay so, Let’s move to the lemon tart recipe without any delay because I’m super excited for it.

Ingredients:

  • 1/2 cup unsalted butter
  • 1/4 tsp fine sea salt
  • 1 cup whole purpose flour
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract

for the lemon curd:

  • 1 tablespoon lemon zest
  • 1/2 cup sugar
  • 3/4 cup fresh lemon juice
  • 1/4 teaspoon fine sea salt
  • 4 tablespoons unsalted butter cubes
  • 3 large eggs + 4 large egg yolks

Directions:

To make lemon tart:

  • Quite well whisk the eggs and egg yolks in a bowl. Place it aside.
  • Heat the lemon zest, juice, sugar and salt over medium heat in a shallow saucepan until the sugar is dissolved. Switch it off. Slowly scrape the eggs into a 1/2 cup while whisking.
  • Load the mixture of eggs into the stove pan when whisking, to avoid curdling. Switch heat back to low and simmer for about 5 minutes, whisking, until mixture has thickened.
  • Remove from heat and whisk in the cubed butter until thoroughly combined.
  • You can strain the zest out at this stage and any egg solids that may be in the curd if you want, by pressing it through a fine mesh Stainer, or just leaving it like it is.
  • Cover lemon curd and refrigerate before ready to use.

For tarts:

  • Mix the butter and sugar together in a stand mixer. Blend with vanilla. Add all-purpose flour, salt, and combine well. Dough refrigerates for 30 min.
  • Oven preheats to 300 ° F. Take the dough from the fridge and squeeze into small tart cups. Place on a sheet of cookies and bake for 10-15 minutes until golden.
  • Remove from the oven and let cool before tarts are withdrawn from the pans.
  • Load-lemon curd with the cooled tart crust. (Optional) Finish with berries or whipped cream.

Note:

  • Make sure the eggs are whisked in whole when making the lemon curd to avoid lumpy curd. You would also want to make sure that in the final cooking and thickening step you don’t miss them tempering stage, and then keep the heat as low as possible.
  • Raise the sugar to 3/4 cup if you want your curd a bit sweeter.
  • Making sure crusts are fully cool until they are removed from the pans and the lemon curd applied to them. If you don’t have pans with clear edges, you should slip a toothpick softly between the side of the crust and the pan to make it pop out.

Freezer Instructions:

The leftovers of lemon tart can be kept in the fridge in an airtight container but I would not recommend to do as the crust will become soggy.
